Garlic Basil Rice

Looking for an easy, weeknight side that is filled with flavor? Try my Garlic Basil Rice to pair with chicken, beef or to enjoy on its own.
 

When we started growing our garden, we weren’t really sure what to expect. People have had either really good luck, or really terrible luck with gardens here in Hawaii. I am thankful to say that we are erring on the side of fortunate. The below photo of my plants was taken last week and these plants are already leaps and bounds larger. It’s kind of incredible. That said, I’m finding fun ways to incorporate fresh herbs into our meals. Last night I paired Garlic Basil Rice with Coconut Chicken and it was easy AND delicious.

Garlic Basil Rice

Like I mentioned, I paired this with coconut chicken, but I think it would be equally good paired with beef, alongside added vegetables or heck, even on its own!

To make my Garlic Basil Rice, you will need:
1 cup cooked brown rice
1 clove fresh garlic
1 tablespoon oil
chopped basil
 
1. Heat a medium saucepan with oil and add the fresh clove of garlic, crushed.
2. When oil is hot, add the rice, stir and let it heat up.
3. When rice is hot, mix in the chopped basil and turn off the heat. Basil will wilt with the heat without burning off the flavor.
