Makin’ Banana Pancakes…pretend like it’s the weekend now. Anyone else singing Jack Johnson?
You will need:
1 cup all-purpose flour (I use Cup4Cup)
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas mashed
1. Mix flour, sugar, baking powder, and salt in a bowl. In a separate bowl, cream together egg, milk, oil, and bananas.
2. Beat the two mixtures together. The batter will be lumpy–that’s okay.
3. Cook on a hot griddle like traditional pancakes and top with sliced bananas.
Extra points for those who serve it with coconut syrup.
