What do Pizza Quinoa Bites & Punch have in common? Our Super Bowl party on Sunday. Both were served and went over extremely well! And because I’m a wonderful blogger, I didn’t get any in-the-process photos, so these will have to suffice.
These bites are so easy and man-approved. In fact, they were loved by all the guys who attended.
You Will Need:
2 cups quinoa, cooked,
1 cup chopped onion, sauteed
2 large eggs
1 cup shredded mozzarella
2 tsp. minced garlic
1/2 cup fresh basil
1/2 tsp. paprika
1 tsp. crushed oregano
pizza sauce
1. Preheat oven to 350 degrees.
2. Mix all ingredients except pizza sauce together in a large mixing bowl.
3. Spoon mixture into a greased mini muffin pan and press down to compress.
4. Bake for 15 minutes.
5. Serve hot with pizza sauce for dipping!
And now, the punch! Because what good party doesn’t have punch?!
You Will Need:
1 can lemonade concentrate
1 bottle of Sprite Zero (or Fresca)
1 bottle of cranberry juice
4 cups water
1. Mix all ingredients together, serve over ice.
