Happy Valentine’s Day! Okay, now that we got that out of the way..
Whenever Dr. Oz talks about food, I listen. Black rice has been on his “hit” list for a long time now and the fact that I’m just now eating it is my own fault. Don’t make the same mistake I did–go buy a bag!
You heard it here first: Black rice will change your life.
We had Mexican night on Tuesday and this EASY meal was so good, I had to share. Like some of my other “recipes”, I hate to even really call it that because it’s THAT easy.
You Will Need:
2-3 chicken breasts, thawed
1 can salsa verde (I used Archer Farm’s for Target), 16oz.
1 cup of black rice
cumin
garlic powder
salt, pepper
1. In your crockpot, place chicken breasts and full can of salsa verde. Set on low and cook for 3 hours.
2. Cook black rice according to bag, 1 cup of rice per 2 cups of water.
3. Shred chicken with a fork when 3 hours have passed.
4. Serve over rice and with a side of beans.
This dish has so much flavor and you’d never know how simple it was! I plan on making it again for guests in the near future–who wants to come over?
