First of all, thank you so much for the sweet feedback from Friday’s post. You people are the best! I say people because maybe there’s a rogue guy besides Dane reading.
Saturday sunrise over the golf course by our house |
What a weekend! I think on my post on Friday I said that I have never been more happy to see a weekend…and now that this weekend happened, I have never been happier to see a week.
A full entire week with so much potential, but let’s rewind a bit.
Friday we were both so tired from work that we came home and collapsed on the sofa after making our own General Tso’s chicken. It is not a photo-friendly recipe and I just throw it in the crockpot. Super easy, super good.
2 chicken breasts, 1/4 cup ketchup, 1/4 cup soy sauce, 1 tsp garlic, 1/4 cup chopped onion, 1/2 cup honey. Toss chicken breasts (chunked) in corn starch until slightly brown and cook in crockpot on low for four hours.
Anyway, Saturday Dane worked and I shopped. If I’m being honest, I was most excited about celebrating National Margarita Day later that night with our friends. And celebrate we did. 4 margaritas deep I decided it was imperative I leave the tequila bar ASAP…thankfully we had walked.
And then Sunday came along and we were all so excited to celebrate 6 months until the wedding, see?
Dane and I had a couple errands to run down in Honolulu (see: getting his watch and computer fixed), so we got up early to get them out of the way so we could spend as much time as we could by the ocean later on. We got to our first stop and they weren’t able to repair the watch. The links from the manufacturer are defective and yadda yadda. Great, okay. Stop #2 at Apple was just as terrific, as the man told us that he could for sure fix it, except it was going to come at a hefty price. No thank you, we will truck along with the erratic mouse.
We were enjoying lunch at one of our favorite restaurants, laughing a bit at our misfortune, but genuinely discussing how much we love our life. We get in the car to go home and are cruising along the highway and the next thing we know…POP!
We hit a brick. One of 3. On the highway. Don’t ask me how or why, but there were bricks on the highway and no one did anything about them. And one of those very lovely bricks happened to blow out our back tire and two tires on the truck riding beside us.
What. A. Freaking. Nightmare.
We spent the next 2 hours sitting on the side of the interstate, half laughing, half wondering if we were going to pee our pants and half thinking “What the hell is Judy doing at home for so long by herself?”
Thankfully us, the tire & Judy are all happy to report that we turned out okay. Our Sunday was a bit of a #fail, but we’ve got 6 months to perfect the 23rd of the month…I think we’ll be okay 😉
Happy Monday, everyone!
