I firmly believe that there should be a day between Saturday & Sunday. After all, everyone knows that Friday night is pretty much shot, because you’re tired from the work week, Saturday is dedicated to errands and/or beach time and Sundays are for reset-ing and resting. Except for Saturday night is also for going out and having fun–so I can’t possible reset and get ready for my week when I’m recovering from Saturday, right? Right.

We spent our weekend doing a lot of this.

When we weren’t sleeping, we were eating. Dane and I are huge fans of trying new recipes and we’ve gotten pretty good at replicating our favorite recipes from restaurants. Why pay the big bucks when you can make it at home?
On the menu this weekend? Pancake Bacon Dippers and Baked Coconut & Bacon Corn
As you can see, bacon was theme here.
The pancake bacon dippers were a definite favorite and super easy. They are the perfect combination of salty and sweet. We dipped them in brown sugar maple syrup and here I go salivating just thinking of them.
To make: Mix up pancake mix, fry bacon, dip bacon strips in pancake mix, cook like a pancake, enjoy! See? So simple.
These (obviously) aren’t something I’d make every day, but they were a delicious weekend treat.
