Coconut Fried Mahi Mahi

I’m not going to lie, we’re serious coconut lovers at this house. coconut chicken is probably our favorite, but this fish is coming in a close second. I know, I know, it’s friend. but seriously, the calories are worth it if you aren’t binge eating fried food on a daily basis.

You Will Need:
2 pieces of fresh mahi mahi
1/2 cup flour (I used Cup4Cup)
1 tsp. paprika
1 tsp. garlic powder
1/4 cup Coco Lopez
oil and a saute pan for frying

1. Heat oil to medium heat.
2. Combine flour, paprika, garlic powder and Coco Lopez.
**if your batter seems thick, add a little coconut milk, or regular milk!
3. Dip Mahi Mahi pieces into batter and place into saute pan.
4. Fry on each side for about 6 minutes–you don’t want to overcook the fish!

We ate them on fish tacos (our favorite!), but it would be equally good on salad or on its own!
