I’m not bullshitting you when I say that I could eat chips and salsa for every meal. It’s a staple in my diet and I usually have one or the other daily. It’s kind of a dietary tragedy, but when you stumble across an amazing salsa recipe that is as simple as this one, the real tragedy would be not sharing it. A friend brought this over to share for our Christmas Eve party and since–I’ve been hooked! Are you ready for a Tuesday treat?
The Best Salsa You’ll Ever Eat
You Will Need:
5 ripe Roma tomatoes, cubed
1 can diced tomatoes with green chilis
2 green onions
1/3 cup chopped red onion
1 jalapeno pepper
1 large clove of garlic
2 tbsp. fresh lime juice
1/4 tsp. cumin
1/2 tsp. granulated sugar
1/3 cup fresh cilantro (optional)
**NOTE: I am not a huge cilantro fan, but blended enough, I couldn’t even taste it!
1. I know you’re getting ready for a million steps here, but I literally put all of this into my Vitamix and hit the start button. I don’t like any chunks in salsa, so I make sure it is 100% purified.
2. If you don’t have a Vitamix or a blender, chop everything up and toss it in a bowl. It’s perfectly acceptable to eat it this way, too! If you want things a little bit blended, try a stick blender.
**NOTE: I’ve made this salsa both ways and prefer the blender, but it is equally delicious both ways 🙂
Also, serve with copious amounts of corn chips! My favorites are here, but mostly because it adds a little bit of color to the serving dish or plate. But let’s be honest – when it comes to corn chips, I’ll eat what I’ve got 😉 Are chips and salsa your love language, too?
