In summer it can get HOT, so when I’m searching for easy appetizers, I look for recipes that will seem refreshing. When we were in Thailand, we enjoyed watermelon and feta on a stick. Heck, I can recreate this easily at home, I thought!
And recreate it, I did…
You Will Need:
1/2 of a Thai watermelon
1/2 of a red onion, sliced
1/4 cup feta cheese
1 tablespoon lemon-lime olive oil
balsamic reduction for garnish
1. One hour prior to serving, slice onions into a bowl and pour the lemon-lime olive oil on top. Set aside.
2. When ready to serve, use a melon baller to hollow the watermelon so you can use it as a bowl! Place the watermelon balls in a separate mixing bowl.
3. In the separate mix bowl, mix together watermelon balls, red onion (and excess olive oil) and feta cheese.
4. Place it all back inside the halved watermelon “bowl”, drizzle with balsamic reduction and enjoy!
