Happy Wednesday, everyone!
I’ve been meaning to make Tequila Lime Chicken for awhile and I finally got the chance to on Monday night. It did not disappoint! The original recipe was for shrimp, but I didn’t have enough on hand to make a meal, so I replaced it with chicken and the shrimp wasn’t missed at all!
You Will Need:
3 chicken breasts, fileted
1/2 cup tequila
1/2 cup fresh squeezed lime juice
1/2 cup orange juice
1 clove garlic, minced
1/2 jalapeno, diced
salt and pepper
1. Mix together tequila, lime juice, orange juice, garlic and jalapeno pepper in a medium bowl.
2. Place fileted chicken breasts (6 slices from 3 breasts) into the mixture and let marinate for 6 hours.
TIP: I let them go overnight!
3. Remove from marinade and sprinkle on both sides with salt and pepper.
4. Grill evenly on both sides and serve!
