If there’s one thing I’ve learned in all my trial-and-error gluten free cooking, it’s that getting baked goods to taste like they should can be a bit of a pain in the ass. The remedy that works best for me is Cup4Cup flour. The flour is formulated as a literal cup-for-cup replacement for normal flour, so your recipes don’t need altered at all! Today I’m diving into one of my very favorite breakfast items…waffles! Who doesn’t love a big, fluffy waffle? Pillowy soft dough, not too dense, light and delicious — yes, this waffle recipe is all of those things and doesn’t require any crazy ingredients to get the consistency just right. So let’s get started so you can make some gluten free waffles!

1/4 cup vegetable oil

1. In a large bowl, combine the Cup4Cup flour, sugar and baking powder.
2. In a separate bowl, mix eggs, milk and vegetable oil.
3. Slowly pour liquid mixture into dry mixture until everything is blended.
4. Cook 4 tbsp. batter in a waffle iron for each waffle.

Serve with your favorite fruit, butter and syrup. Enjoy! If you liked this recipe, your might enjoy these gluten free rainbow pop-tarts, too 🙂
