What if I told you that I could give you an M&M brownie for 150 calories?
A brownie that tasted like it was loaded with sugar, butter and flour, but really the only thing keeping it moist was….a can of black beans?!
I know what you’re thinking…Kait, you’ve taken this too far. I’m not eating a freaking black bean brownie. But HEAR ME OUT, FRIENDS! I promise you, this is going to be good. A really long time ago, I came across a recipe for black bean brownies and it was really good. I even fooled Dane, who told me he wouldn’t have known the difference.
Now that I have a Vitamix at my disposal, I wanted to kick things up a notch. I took this recipe and modified it slightly. These brownies are gluten-free, grain-free and (in my mind) guilt free! They’re also low fat, so kudos to THAT.
ENJOY!
You Will Need:
1 can black beans
2 eggs
1/2 cup cocoa powder
1/2 cup sugar
1/2 teaspoon coconut oil
1 teaspoon balsamic vinegar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon instant coffee
1/4 cup coconut milk
1/4 cup coconut milk
1/2 cup M&Ms
1. Preheat oven to 350 degrees.
2. Combine all ingredients except eggs into Vitamix (or food processor).
3. Blend on high until the mix is smooth.
4. Fold in eggs and M&Ms.
5. Pour into a greased 9×9 baking pan and bake for 30 minutes.
*Make sure a toothpick comes out clean, it may require longer cooking time depending upon your oven*
