Summer Salad & Smoked Buffalo Cauliflower

One of the very best things about being in Pennsylvania for the summer is the bounty of amazing fresh produce. That, and my parents’ insane outdoor cooking setup. (I’ve snapped it before so follow me over there — kaitsawyer!) I’m not kidding when I tell you that I could easily move all our stuff into their basement and never have to remotely bother them upstairs, because they have a full kitchen, bar and outdoor patio cooking area that is the freaking bomb.com. Do people still say that? Anyhow…
One of the things I love most is their smoker and all the delicious food that comes off of it. Their newest dish is this smoked buffalo cauliflower.
Believe me, I know this meal doesn’t look crazy filling, but is! All they do is put their hot plate onto the smoker with the cauliflower heads on top, washed and cut. Then, they drizzle the hot sauce of their choosing on top — they use wing sauce from The Anchor Bar in Buffalo (raise your hand if you’ve been there – that shit is delicious)…but any kind of hot sauce will do! Let it smoke until tender, but check it every 15 minutes or so.
It’s the perfect amount of crunchy and spicy and pairs amazingly well with a big summer salad. We squeezed fresh lime on top with a bit of blood orange olive oil and balsamic.
This is, hands down, my new favorite summer meal!
