There’s something about summer that just makes me want to throw a party – anyone else? Nicer weather means more opportunities for outdoor parties and summer holidays are a great reason to get friends and family together for food and fun. One of my favorite party food combos is chips and salsa, but I have to be honest – the idea of serving it at a party makes me cringe. So many chances for double dipping – gross! In an effort to make my favorite party food more finger friendly (HA!), I came up with these Spicy Tomatillo Salsa Shooters by combining a new-to-me ingredient, tomatillos, and my favorite guacamole recipe.
These shooters take less than 20 minutes to prep start to finish and are much friendlier for sharing at large parties where you don’t necessarily want a ton of hands all dipping into the same bowl.
Spicy Tomatillo Salsa Shooters
Before your next party, head out to Walmart and pick up 1 can of Hunt’s® Petite Diced Tomatoes, 1 can RO*TEL® Diced Tomatoes & Green Chiles and a small package of plastic appetizer cups.
For the salsa, you will need:
1 28 oz can of Hunt’s® Petite Diced Tomatoes
1 can RO*TEL® Diced Tomatoes & Green Chiles
1 jalepeño, cleaned
1 small white onion
2 tomatillos, cleaned and boiled
1 lime (yes rind and all!)
2 cloves garlic
1. Put all of the ingredients in your food processor and blend on medium until desired consistency.
For the guacamole, you will need:
2 ripe avocados
1/2 small red onion, diced
1/2 jalapeño, cleaned and diced
1 clove garlic, minced
1/2 seeded tomato, diced
1 tsp. salt
splash lime juice
1. Remove avocado from flesh and mash in a bowl.
2. Add red onion, jalapeño and garlic to a food processor and pulse until pieces are very tiny.
3. Dump food processor mixture into mashed avocado and stir.
4. Mix in tomato, salt and lime juice.
5. Serve immediately!
When you have both the salsa and the guacamole made, spoon a little of each into each appetizer cup. If you wish to portion out chips ahead of time, put 3-4 chips on top of each one.
