Our weekend was my very favorite kind – filled to the brim with lots of relaxing that we are enjoying right through today since it’s Columbus Day! We’ve been waking up early, getting in a workout, watching football, taking the dogs swimming, a little bit of boating, some sunshine, some rain and a whole ‘lotta family time. It’s been so, so nice to not really have plans after being go-go-go for awhile. Sadly, it all comes crashing down tomorrow as we hop on a plane for our next adventure – some mainland time! WOO WOO! We take the pups swimming all the time, but this was their first time on a boat and having free roam of a huge area of water with no waves. Needless to say, they’ve been asking to go back ever since the boat docked 😉
I also made my version of What’s Gaby Cookin’s Chicken Tortilla Soup and it did not disappoint! It was slightly rainy both Saturday and Sunday, so it was a good “fall in Hawaii” kind of meal. I sub in sweet potatoes instead of chicken and skip the cilantro on top. Mmm! So tasty! The only photo I snapped is one for Instagram stories, but it’s a fan favorite around here. Dane and I both love how much flavor it has and we are, admittedly, not huge fans of soup, particularly not here in the islands so…you know it’s good!
