Avocado Tuna Boats

Okay so I realize that today’s recipe might not be for everyone – I get that! So let me preface today’s post with the idea that you could make this recipe from any base you want – chicken, turkey, salmon, pork…basically anything that is shreddable. I had tuna on hand and we eat a fair share of seafood in this house, so that’s what I used. One of the best parts of this recipe is that you can modify it to meet just about any dietary need. Avocado Tuna Boats were born in our house out of a need to use up some avocados that were going bad, some homemade mayo that was also on its way out and half a head of romaine lettuce that…you guessed it..needed to be used up before it became soggy and brown. Avocado Tuna Boats

You Will Need:

1 large can of drained tuna, or about a cup and a half of your go-to meat, shredded

1/2 cup homemade mayo (I use this recipe)

1/2 onion, chopped

20 grapes, chopped

2 avocados

salt, pepper, garlic powder

2. Add in a sprinkle of salt, pepper and garlic powder.

3. Cut each avocado length wise and remove the pit.

4. Scoop mixture into avocados.

5. Totally optional –> Garnish with pecans and serve with lettuce on the side.Avocado Tuna Boats - Whole30 Compliant Dinners - Dinner Ideas Whole30 - Clean Eating Recipe - Quick and Easy Dinner Ideas - Communikait by Kait HansonI love the added crunch of the nuts, so even if you don’t like pecans, you could certainly use almonds or walnuts and I think pistachios would be really good, too! The lettuce is also optional, but I found that I kind of liked making it into a salad, so I would highly recommend it. Another good option would be using butter lettuce and making lettuce wraps with the avocado. I mean – can you really go wrong with avocado?! I think no! Plus, if you don’t like grapes you could always do dried raisins or Craisins. Like I said – tons and tons of options for making this your own!
