Okay so if you’ve been around for a little bit, this is week 3 of me writing out our ‘Meal Planning + What We Ate Last Week’ posts. I’m thinking that I might try to keep them going, but maybe switch up the posting days to Saturday so that maybe people can work some of the recipes into their own meal planning? I don’t know, it’s just a thought. I’d love your input on it! If you are new, check out the first week and second week of meal planning + what we ate before diving into this post ๐ Also, I try to post the plan for the week ahead on my Facebook page, so if you aren’t already following along there, fell free! Now, let’s get to all the delicious food we ate this week…
Sunday – Super Bowl Snack Carnival – Oh dear heaven – where do I even begin? I had big plans to make my Buffalo Cauliflower Wontons, as well as Better-For-You Spinach Dip, but ended up only making this pizza pull apart bread that I found on Pinterest. It’s just about as unhealthy as it looks. The only thing I swapped in was Daiya Shreds for cheese. Holy shit – it’s very, very good, but my stomach was not pleased afterward. 10/10 recommend it for a good football party snack though ๐
Monday – Big Ass Salad – This one was just some chopped up butter lettuce and onions with roasted potatoes and the best seasoning ever. I grew up using this dressing so that’s what is usually on our salads (also big fans of just plain olive oil, good balsamic, salt and pepper!) – oh man, it’s so dang good! Makes me miss home 100%, but thankful for our parents who ship it and Amazon where you can stock up! ๐
Tuesday – Tomato Tortellini Soup – I had never made this before, but I saw the recipe on Pinterest and knew I could modify it pretty easily. I used tortellini from Udi’s and subbed coconut milk instead of heavy cream. I also added in a cup of chopped fresh basil, since we have a ton right now. I also used my immersion blender prior to putting the tortellini in, because I don’t like chunks of any kind and neither does Dane. The immersion blender proved to be key for us, otherwise this would have been a pretty chunky soup. That said – this was AMAZING! I’m definitely making it again!
Wednesday – Sweet Potato Enchilada Bake – No real surprise here – we love this meal. Per usual, I subbed in Daiya shreds instead of real cheese, skipped the cilantro and omitted the cut up tortillas. It’s a big favorite in our house, because it tastes so good and is so filling. A good spiralizer is a must for a lot of the recipes I make and this one for less than $20 has been a lifesaver for me. 3 years strong!
Thursday – Spicy Thai Noodles – I found this recipe on Pinterest and had been wanting to try it forever! It calls for linguine, but I thought that felt kind of weird, so I opted to try some bean noodles I found in the grocery store. I should have stuck with linguine, or something else. The noodles I used looked like jelly fish and they tasted…squishy? I don’t know. It wasn’t awful, but I didn’t love it and Dane didn’t either. Other than that – this dish is WONDERFUL! Seriously – so full of flavor. I would 100% make it again but definitely sticking to noodles I know.
Friday – Shrimp Tacos – I thought FOR SURE I was planning ahead and putting something fun for Friday was going to work out. For the past two weeks, we’ve fallen off the meal planning band wagon by the time Friday rolls around. This time, instead of opting for something entirely different, we ate leftovers. I know – totally weird considering they are not my thing. But this should prove how much we like that Sweet Potato Enchilada Bake, because we ate the leftovers with a side of our new favorite chips that are entirely grain free. SO YUMMY! The tacos wound up being moved to Saturday night and they were majorly delicious. No real recipe to follow, just marinated some jumbo shrimp in agave, sriracha, garlic and lime juice, chopped them up and put them in some grain free tortillas that actually taste good with black beans, corn and guac. MMMM!!!
Alright so let’s chat – should I keep this series going? Should I move it to Saturday? Ditch it altogether and stick to sharing on Instagram stories? What are your thoughts?!
