Soba Noodle Bowl Recipe
Let’s talk about this delicious noodle bowl! The soba noodles are a vehicle for the most flavorful sauce and while I love the combination of kale and carrots here, you can use this recipe as an opportunity to clean out your refrigerator. A bell pepper on its last legs? Slice it up and toss it in! Mushrooms that you forgot you bought? Go ahead and add them! Broccoli would also be another great addition. If you make a lot of stir-fry style dishes, I bet you already have many of the sauce ingredients in your pantry. And if you don’t, let this dish be your introduction to them! It’s a fairly simple combination of ingredients that make a versatile sauce perfect for any stir fry.
This dish is ready in about 20 minutes, making it ideal for a quick dinner or lunch. I think it’s perfect as a vegetarian dish, but shrimp would make an excellent addition if you wanted to add them. Let the noodles and sauce be a vehicle for whatever you want to add! The sauce is perfection and noodles are just comfort food at its finest. This noodle bowl is packed with veggies, but it’s also packed with flavor. Sometimes dishes that are full of vegetables just taste too “healthy” and lack flavor, but with the tender noodles and spicy sauce in this recipe, you won’t even notice how healthy this dish really is.

Spicy Kale Soba Noodle Bowl

Serves: 2 servings
Ingredients
2 tbsp. sesame oil
2 cloves garlic, minced
2 inch piece fresh ginger, grated
3 tbsp. soy sauce
3 tbsp. rice vinegar
1 tbsp. brown sugar
1 tsp. red chili paste
1 large bunch of kale, stems removed, chopped
2 large carrots, peeled and julienned
14 oz. soba noodles*
3 green onions, chopped
1/4 cup roasted peanuts
1. Heat sesame oil in a large frying pan. Add garlic and ginger and cook until fragrant.
2. Add soy sauce, rice vinegar, brown sugar, and red chili paste to the pan. Let cook for 1-2 minutes until bubbling.
3. Place kale in pan and cook until wilted and tender.
4. Add carrots and soba noodles to pan. Cook for 5 more minutes until noodles are tender and sauce is evenly distrubted.
5. Serve topped with green onions and roasted peanuts.
