Summer is so close I can practically taste it! And I have to say…if summer was a cocktail, it would be this delightfully refreshing concoction that Dane and I turn to for a tropical treat as soon as the temperatures soar above 80 degrees here in Hawaii. My Pineapple Poolboy is equal parts fruity and refreshing and the little kick of fizz elevates it from just your average mixed drink to a beautifully bubbly boozy beverage – say that 5 times fast! One of the things that makes this a go-to for us is that while it’s loaded with flavor, it comes together in a snap and is comprised of things you probably already keep in your refrigerator or pantry.

So, with that in mind, ring the pool boy, ‘cause we’re about to get this pineapple cocktail party started!
Pineapple Poolboy
To bring the Pineapple Poolboy together, you will need:
2 shots coconut rum
2 shots pineapple juice
Juice from half a lime
About 1 shot 7UP

1. In a shaker, combine coconut rum, pineapple juice and the juice from half of a lime freshly squeezed. Shake well.
2. Pour over ice in a tumbler.
3. Top with 1 shot of 7UP. To be honest, I typically don’t measure this part and just pour a quick shot straight from the bottle.
4. Stir to combine, garnish with a lime peel or wedge and enjoy!
A couple things to note: The only critical step of this recipe is to make sure that there are equal parts rum and pineapple juice, so if you really want to kick things up a notch, make it a triple and go 3 for 3! If coconut isn’t a flavor you prefer, feel free to substitute regular white rum or another flavor. To streamline the drink, sub in Pineapple Rum and to make it more tropical use Dragon Berry Rum. And finally – to make this drink a bit stronger, add in a floater of dark rum in the shell of your juiced lime. Bottoms up!
Dane and I love the added fizz of 7UP in this drink (what is it about carbonation that is just so good in the hot summer months?!) and the lemon-lime flavor adds nicely to the drink.
