Northern Lights Sugar Cookies

There is nothing I love more than a good sugar cookie, so a sugar cookie that plays into my love of travel? SIGN ME UP! Seeing the Northern Lights is a big part of our agenda this year. We didn’t get deep enough into Alaska to witness them, but I’m hopeful that we get to see them in one of our next travel destinations…ICELAND! You all know I enjoy any opportunity for fun colored food, so when this idea popped into my head, I got right on it. Without further ado, Northern Lights Sugar Cookies….! Now let’s just hope we actually get to see them in the sky, not just on my table 😉

Northern Lights Sugar Cookies

This recipe comes together so quickly and can honestly be customized to match color preferences for any type of tie dye cookie you might be interested in making. The Northern Lights are SO gorgeous, so that is the theme I chose.

You Will Need:

3/4 cup shortening or butter

1 cup sugar

2 eggs

1 t. vanilla

2.5 cups flour (I tested out this one for these cookies and LOVED it! It’s a great affordable gluten free option!)

1 t. baking powder

food coloring gel

Tie Dye Sugar Cookies

1.Cream together butter, sugar, eggs and vanilla until smooth.

2. In a separate bowl, combine flour and baking powder.

3. Sift flour mixture into wet mixture until well combined.

4. Separate dough into 4 equal balls.

5. Dye each dough ball using – purple, blue/teal, pink + yellow.

6. Set dough balls in the refrigerator and let chill for 1 hour.

7. Remove from refrigerator and gently squish together the 4 dough balls.

8. Roll combined dough balls flat on a floured surface with a rolling pin.

9. Use a star cookie cutter to create your cookies.

10. Bake at 400 degrees on a silicone baking sheet for 6-8 minutes.

*You’ll notice in the photo above that I have them on a standard baking sheet – they burned! I’m not sure if it was a fluke, but when I switched to my silicone sheet, they remained colorful without burning, so I think that’s an important detail!
