Happy Thursday everyone! It seems like I can’t quite get my days straight this week and I’m going to go ahead and blame the long weekend. No complaints from me, but it’s left me wondering what day it is on more than one occasion this week! Anyway, I was cleaning off the photos from my phone and figured I would pop in with a little dose of life lately via some (uber fancy) iPhone photos. One of Dane’s co-workers made me an entire pan of pumpkin mochi for my birthday and it was like hearing angels sing when Dane showed me this treat. It was such a thoughtful gesture and we’ve been enjoying it since we got home from Las Vegas!
Am I the only one who makes a mad dash to the clothing section of Costco when I walk through the pearly gates door? They have such good quality clothing (particularly for men at our stores) and we’ve nabbed quite a few deals recently. Most of our adventure gear for Kenya was from the 32 Degrees line they carry and it worked wonderfully. I spotted these wicking polos for men and grabbed a black one for Dane. It’s a great casual work shirt and doubles as a golfing polo – WIN!
Everyone has been posting their #10YearChallenge, so I figured I would hop on the bandwagon and do mine. I’m glad I finally found an eyebrow pencil and lipstick!
Bill is such a ham, so when I saw him laying belly up in my office the other day, I had to snap a picture.
We got to see the Super Blood Wolf Moon over MLK weekend and it didn’t disappoint! We were initially kind of bummed, because Hawaii rated really low on the visibility charts we reviewed, but we ventured out to the beach near our house anyway with hopes of catching a glimpse. You could definitely see the orange with the naked eye and I loved the shots I was able to grab with a long exposure using my tripod and DSLR.
I’ve been trying oh-so-desperately to hop back on the meal planning train. It just makes our life so much easier! Earlier this week we made taco bowls in spired by What’s Gaby Cooking and then topped it with Daiya yogurt mixed with lime juice and taco seasoning from Calicutt’s. It was DELICIOUS! We also got to enjoy it with a side of plantain chips my friend Casey gave me for my birthday from Trader Joe’s!
Friends of ours are hosting an exchange student this semester and she’s learning all about life in the States. I figured since she’s not able to leave the continental U.S., we should send her a little taste of Hawaii via postcard. Ever since Dane and I moved into our rental house, we’ve struggled with a small bathroom and the limited space it includes. Last weekend, we had had enough and both woke up intending to fix this space conundrum. Now, let me also share that home projects and DIY are not our specialty, so hanging shelves with anchors and making sure shit doesn’t fall off the wall is stress city. It is what it is. That said, I’m thrilled with how this turned out! I love the extra space the shelves add and the bucket baskets are great for storing items we use every day like face wash, contact solution, etc.
For Christmas, Dane got me this little at-home s’mores kit in my stocking, so we figured it was about time we use it! We turned it into a little date night with a movie and laughed at ourselves as we tried to brown marshmallows using a tea light.
Okay, I have a serious obsession with the Loaded Hummus recipe from What’s Gaby Cooking (can you tell my love for her is real?). She posted it last summer and I’ve been making variations of it ever since. It’s SO GOOD and even though peeling all those chickpeas is a serious pain in the ass, it’s beyond worth it. I tried it once without peeling and was sorely disappointed. Just trust me on this one! I made it last week for our Friday sunset date topped with with spicy garlic roasted mac nuts, Brussels and some slivered onions. It was SO YUM! I served some root vegetable chips as well as regular corn chips for dipping and it’s a meal all in itself!
There are more food photos in this round-up than I planned on – sorry! Another dinner we have enjoyed lately is taking shredded sweet potatoes and making a “pancake”, topping it with smashed avocado and putting and egg on top. It’s SO GOOD! We like our eggs over easy, but it would be good with fried eggs, too.
We got a couch for our living room (post on that coming soon!) and Judy has been loving it! We got a waterproof material, so I’m hopeful it helps deter some of the crazy dog hair/mud/dander that comes along with having two Labradors. So far, so good!
Dane and I took a day trip up to the North Shore to walk around last weekend and it was nice to just kind of stroll leisurely with no set agenda. We saw some alcohol infused shave ice, an adorable The Surfing Animals ABCs display (it’s also a great kids book!) and ate some sandwiches as big as our head. A banner day if I do say so myself!
