I never quite realized just how popular my ‘Eating Lately Via My iPhone‘ posts were until I started receiving messages on Instagram about my food posts. I’m SO glad you guys like them. My family will tell you that I’ve been taking food pics my whole life, which is probably pretty close to true. In any case, I’m glad you like these kinds of blog posts and I hope to continue to share them. As always, all photos are snapped with my trusty iPhone and I link to recipes when I’ve got them! Without further ado…what we’ve been eating lately!
Eating Lately Via My iPhone
Vegetarian Power Bowls – Dane and I had made this recipe before and to be fair – we loved it as is! That said, on the night pictured below, we had quite a few vegetables that needed used that strayed quite a bit from the regular recipe. The one thing we kept the same was the tahini dressing, because it really makes the dish. Would definitely make again!
Roasted Salmon with vegetables and quinoa – This is a go-to in our house, because all I do is put a bunch of vegetables on a sheet pan and roast up a piece of salmon to split. The meal comes together in less than 30 minutes. Because we always have cooked quinoa on hand, I just added a little scoop of it. So good…and easy!
Sweet Potato Noodles with Cashew Alfredo – This cashew alfredo sauce is DELICIOUS! And honestly — it sounds intimidating, but you might be shocked by how easily it comes together. We make this dish quite a bit!
Meatless Power Bowl – Another favorite in our house solely thanks to the dressing recipe for on top! Though, mine never looks like the photos ๐ This is another meal where you can sort of make it your own based on what you like and what is already in your refrigerator. Make sure you keep the cabbage and dressing on top, because the crunch of the cabbage and taste of the dressing are a winning combo!
Acai Bowls + Smoothie Bowls – We are big, big fans of acai bowls and smoothie bowls in this house! Another one where you can make it your own easily ๐ Directly below is a strawberry smoothie bowl with a bit of granola and some coconut I needed to use. The second one is an acai bowl ๐
Mahi Lettuce Wraps – I lovingly refer to these as tacos and Dane is always like — Kait, these are not tacos. LOL! He’s right, but they give me the taco taste when I want something that’s a little less carb-y. I cook the Mahi on the stove and then add in taco toppings as I have them! Easy peasy.
Coconut Shrimp Cakes – We love this recipe and we’ve been making some variation of it for a few years. On this particular night I served it with corn on the cob I grabbed at Costco, plus some roasted veggies. I also added a spicy sauce on top (homemade Whole30 mayo and Sriracha). SO good! Dane requests this meal quite a bit, so definitely husband approved!
Tuna Lettuce Cups – We eat this at least 1-2 times per week. Something about it is just…easy. It’s filling, requires minimal work and we always seem to have the ingredients on hand. I loosely follow my own Avocado Tuna Boats recipe and just use what I’ve got. On this night I added pistachios to the top of mine, because I love a good crunch.
Best Ever Tom Kha Gai – Again, nothing new with this one. We make it a lot more than I would care to admit, but it’s good and filling and — you guessed it — you can make it with whatever you like/have on hand.
Cauliflower steaks – When my mom was visiting, she got me hooked on cauliflower steaks. It sounds complicated, but it’s really not. You take a large head of cauliflower and slice it down into “steaks”. Just cut all the way through the head! Some pieces will fall off, but you can usually get 4 good “steaks” from each head of cauliflower. When I have it all sliced down, I top it with Gazebo Room and put it on my grill plate on a HOT (400+ degrees) grill. Oh, it’s so good.
