I’ve seen quite a few people posting recently about trying to incorporate more vegetarian meals into their 2020 menu plans. I’m all for it! I have also had two separate friends reach out to me and ask for my favorite meat-free meal ideas. I took this as a sign to put together a post that talks about my favorite vegetarian recipes and the ones I reach for time and time again. If you are in the market for some veggie-based meal ideas, today’s post on my go-to vegetarian recipes is for you!
My Go-To Vegetarian Recipes
Just as a disclaimer, I try not to label how I eat, because I don’t want to offend anyone who feels passionately about eating habits. That said, I don’t eat red meat, chicken or pork regularly. I tasted some prosciutto and bacon jam over the holidays (since I was making it for a party) and my stomach paid dearly for it. Chicken and pork just don’t appeal to me anymore. I do eat wild caught fish and the only shellfish I can eat without feeling sick is shrimp. I do try to listen to my body and it has served me well in terms of health.

Easy Vegetarian Snacks
If you’re just easing into vegetarian recipes at your house, don’t be afraid to start small. It can seem a little bit overwhelming at first trying to assemble ingredients, buy fresh produce, and put together new recipes every night, particularly when you’re just starting out.
I buy our vegetables in bulk from Costco and nearly every meal involves a sheet pan of roasted veggies. That’s kind of just how we operate here, but having them on hand does make life easier!
