Whew! It’s been a minute since I checked in with an Eating Lately Via My iPhone post. When I took a poll on Instagram, this was one of the top requested posts. I think sharing what I eat (for whatever reason?!) really resonates with people and I’m happy to do it. I know when I see what people are eating, it’s a great way to find new recipes or dinner inspiration. That said, I almost always modify the recipe in some way (I can’t help myself), but make notes of changes for anyone following along. Let’s dive right in to what we’ve been eating lately, all courtesy of my trusty iPhone.
Eating Lately Via My iPhone
Butternut Squash Ravioli – If you are a Costco shopper, then you might know about the amazing seasonal specialty of butternut squash ravioli. They sell it in a 2-pack and it costs around $14 for both. That said, toward the end of the holiday season, they put it on clearance for $7 and it might be the best deal in the whole warehouse. We stock up and freeze them! Anyway, for this particular night, I tossed the ravioli in butter with zucchini, onions and garlic. Was delish!
Corn Chowder – Admittedly, this is another Costco seasonal special, but if you find it regularly in your Costco, I HIGHLY recommend it. It’s their spicy corn chowder and one of our favorite dishes.
Refrigerator Salad – Do you ever have those nights where you need to use up what you’ve got in the fridge? We call those nights refrigerator salad at our house. We had a leftover bag of kale salad mix (also fro Costco), green beans and firecracker shrimp cakes. We put them all in a salad, added a few peppers and onions and called it good!
Vegetarian Bolognese – Are. you enjoying this vegetarian bolognese yet? It’s hands down one of your favorites!
Refrigerator Salad – I had forgotten how often we have been eating this dish lately, but with the holidays and birthdays at our house, we’ve had a lot of leftovers. Zero complaints! I love a hearty salad!
Loaded Hummus – One of my very favorite What’s Gaby Cooking recipes right here! We make it pretty frequently and shared this with some friends who were visiting. Once you shell all the chickpeas, it’s extremely simple and if you load it up with enough toppings, it’s an entire meal.
Tuna Salad Lettuce Wraps – This is a go-to in our house and we eat it pretty frequently. Mostly because it’s quick and easy and filled with protein. Just get a small head of butter lettuce (we buy ours locally sourced from Costco in a 3-pack) and create cups. Then mix up some tuna salad. We add nuts and grapes into ours (along with a slew of seasonings) to make it a bit more hearty.
Butternut Squash Soup – This is a super easy recipe that is great for warming up if you live in a cold climate! On a sheet pan, chop up and roast butternut squash, an apple, an onion and 5-6 garlic cloves at 400 degrees. When completely soft, add it into your Vitamix with some macadamia nut milk (or regular milk) and blend until smooth. Enjoy!
And there we have it! I realize that my meals aren’t that interesting this go-around, but I am trying my best to hop back on meal planning and meal prep, so that the next Eating Lately post is a bit more robust 🙂
