If you have ever been to a gathering with my family, there is a really good chance Rice Krispie treats are involved. My grandma is the queen of making them and always with more butter than the original recipe calls for, which creates a nice buttery after-taste in your mouth.
I haven’t seen my family in so long (over a year at this point) and I’ve been missing them so, so much. In honor of my grandma and her treats, I decided to make her treats with a fall twist. I spotted Pumpkin Spice Cheerios at Target and decided – that might be good with marshmallows and butter. But seriously – what ISN’T good with marshmallows and butter?!
The end result? Buttery, chewy, marshmallow Cheerio bars that have a subtle hint of fall flavor!
Pumpkin Spice Marshmallow Cheerio Bars
The best part is that this recipe only requires three ingredients and it comes together SO quickly. I shamelessly eat them both breakfast, lunch dessert, a post-run nibble, and then again before bed. I have zero shame – they just remind me of home!
Cheerios Cereal Bars
And no – your eyes aren’t deceiving you! The Pumpkin Spice Cheerios have a slight orange tint to them, which can be a little off-putting, but I promise the taste is not overwhelming and definitely not super sugary (which I was afraid of!). It’s also worth noting these Cheerios are really good to just have straight from the box as a snack. Not that I would know anything about that 😉
Cheerio Marshmallow Bars
To recreate these Pumpkin Spice Marshmallow Cheerio Bars at home, you will need:
1 box of Pumpkin Spice Cheerios
2 bags of marshmallows
5 tbsp. butter
1. In a large pot, melt butter over low-medium heat.
2. Add in 5 cups of marshmallows and stir until melted.
3. Mix in 6 cups of Pumpkin Spice Cheerios.
4. Place in a 9×13 pan and let cool completely. Then enjoy!
