Eating Lately Via My iPhone

How is everyone doing? I hope you’re hanging in there. It will come as no surprise to anyone that we’ve been eating at home more than usual and supporting local takeout when we can. Sometimes I feel completely overwhelmed at the thought of going into my kitchen to prep ANOTHER FREAKING MEAL, but I figured sharing what we’ve been cooking and eating lately might inspire someone else.

I know when I see what people are eating, it’s a great way to find new recipes or dinner inspiration. That said, I almost always modify the recipe in some way (I can’t help myself), but make notes of changes for anyone following along. Let’s dive right in to what we’ve been eating lately, all courtesy of my trusty iPhone.

Chicken Avocado Caprese Salad – This is an oldie but goodie at our house and it’s so, so good. I had forgotten it, filed it away, and decided to bust it out again. Those recipes are the best, aren’t they? Anyway, I made the chicken for Dane and did cauliflower for me. It’s definitely a favorite and so full of flavor.

One Pot Pad Thai – Do you ever see those videos on Facebook that catch your eye? This was one of those for me – Tasty gets my every time! I was shocked by how easy it was — the hardest part was tracking down the noodles — and it was super fast to put together. I will say, it was a bit too salty for me, but that is easily adjusted for next time!Eating Lately - One Pot Pad Thai

Sheet Pan Vegetables – There was a period in my life where I was making sheet pan vegetables every dang night – what happened? I don’t have answers, but it felt good to prep some vegetables for the week and enjoy them alongside shrimp and salmon. I just toss in olive oil with garlic powder, salt, and pepper and roast at 375. Eating Lately - Sheet Pan Vegetables

Fish Taco Bowls – We are really into “bowl” meals in this house. By that I mean – taking something that would normally be a taco, or burrito, or wrap, and making a deconstructed version that goes into a bowl. On this particular night, we skipped the taco shells and made it into a taco salad (ish) with fresh mahi mahi. Was delicious!Eating Lately - Fish Taco Bowls

Panzanella – Ohhhh fresh vegetables, crisp garlic, and toasted bread. What’s not to love? This is on heavy rotation at our house!Eating Lately - Panzanella

Pumpkin Lasagna – This is a fall must-make for anyone who is just a tiny bit obsessed with fall flavors. It can be pretty rich and tastes best straight out of the oven. Admittedly, the leftovers are a little bit dry, so if you have extra pumpkin you can whip together as a little bit of a “sauce” for leftovers, I would highly recommend that!Eating Lately - Pumpkin Lasagna

Lemony Lentil Soup – This was a new-to-us recipe, but it reminded me a lot of the New York Times Chickpea Stew as far as cooking it. We loved the flavor (I know, it’s not much to look at) and the naan bread paired with it was a great add. Eating Lately - Lemony Lentil Stew

Sweet Potato Noodle Enchilada Bake – We have made this so many times over the last couple years and it will definitely stay on the rotation. I skip the cilantro (always) and usually pass by the chopped up tortillas, too, unless I have some I really need to use. Trust me when I tell you that the homemade enchilada sauce is worth the extra little push of effort! Eating Lately - Sweet Potato Noodle Enchilada Skillet

Blackened Shrimp Salad – Another salad dinner winner! This one is worth a little extra effort, I promise. The first time I made it, I felt like there was a good bit of chopping and prep involved, but the more you make it, the easier it gets, I swear. Sometimes when I don’t have basil, I skip it, and it’s just as good! I also sub in green goddess dressing and it’s just as good!Eating Lately - Blackened Shrimp Salad
