How To Make Your Own Coco Lopez Cream of Coconut
On New Year’s Eve, I had it in my head that I wanted to make Coconut Lime Margaritas. You would think in Hawaii that cream of coconut would be easy to find, but that isn’t the case. After exhausting two places, I had given up – there was no Coco Lopez anywhere! And frankly, in the middle of a pandemic, I had no desire to figure out where to buy Coco Lopez on an island.
Since we always have coconut milk on hand, I wondered if there was a way that I could just make my own? I was a little bit hesitant, because making it seemed completely overwhelming and I was also running short on time.
Turns out, you can easily make your own DIY cream of coconut at home with just a few supplies you likely already have in your pantry!
When I thought about it (and after using Google to check the ingredients!), Coco Lopez is really just sweetened coconut cream, so that is the basis I used for this recipe!
For this recipe you will need:
1 can full fat coconut milk
1 1/2 cups granulated sugar
1/4 tsp. salt
1. Mix all of the ingredients together over low heat in a saucepan.
2. Whisk until the sugar feels well-combined (you will feel it with your whisk as it dissolves over the heat)
3. Remove from heat when the mixture begins to look translucent.
I stored my mixture in a tall glass Mason jar with a tight lid and used all of it over the course of one night, but had I not, I would store it in the refrigerator. To be honest, I will never buy cream of coconut again, this homemade version is so much tastier!
Cream of coconut can be used in drinks like Pina Coladas and Painkillers, dessert recipes like Coconut Cream Pie or Coconut Poke Cake, and of course – Coconut Lime Margaritas!
