Easter Bunny Cookies

Looking for a delicious Easter cookie recipe? These Easter bunny cookies are simple and cute!

I have to admit something – I’m not a huge fan of traditional Easter foods. I was talking to my mom on the phone and she was showing me these adorable Easter cookies she had made that looks like PEEPS. I knew I had Easter cookie cutters somewhere, so I decided to put them to good use.

Easter Bunny Cookies

Since we aren’t cooking an Easter meal this year, I decided Easter sugar cookies were a nice treat to feel festive without a ton of fuss. Anyone else feel me on this one?

I wasn’t planning on putting together this post so quickly, so all the photos were taken on my iPhone, but you get the general idea. The best news is that this Easter cookie recipe is pretty impossible to mess up! Let’s dive in…

Pastel Easter Bunny Cookies

Easter Cookie Recipe

For the sugar cookies, you will need:

3/4 cup shortening or butter
1 cup sugar
2 eggs
1 tsp. vanilla
2.5 cups flour (I use this one for the best gluten free cookies EVER!)
1 tsp. baking powder
 
1. Mix all ingredients together in a stand mixer.
2. Set dough in the refrigerator and let chill for 1 hour.
3. Roll flat on a floured surface with a rolling pin and use a bunny cookie cutter to create cookies.
4. Bake at 400 degrees for 6-8 minutes.
 
For the icing, you will need:
 
2 cups powdered sugar
1/4 cup butter (room temperature)
1/2 tsp. vanilla
splash milk (I use coconut milk)
 
1. Mix all in ingredients in a medium-sized bowl.
**You will also need one bag of mini marshmallows and whatever kind of sprinkles you choose to use!**

When your cookies have cooled, take a cup of mini marshmallows and cut them in half using kitchen scissors.
 
Next, ice each cookie and place a halved marshmallow in the place of the tail.
 
Top each cookies with sprinkles while the icing is still wet + let dry.

One thing worth noting: to make this recipe easier on yourself, you can TOTALLY use pre-packaged sugar cookie mix and store-bought icing. No shame in that whatsoever! And I obviously don’t have kids of my own, but I think this would be a fun one for them to join in on as well 🙂
