In a rut for what to make for dinner this week? I’m sharing my favorite weeknight dinner recipes that the whole family will enjoy!
The weeknight dinner time shuffle is real at our house. The only way we’ve been able to combat that is intentional meal planning, but I’ll be the first to tell you – I fall off that wagon pretty easily. When I don’t have anything set, I have a handful of fallbacks that I know both of us will enjoy.
So whether you’re looking for some new easy dinner recipes, or just need a little weeknight dinner inspiration, here are our favorites…
My Favorite Weeknight Dinner Recipes
Cauliflower Corn Tacos – Sheetpan, vegetables, seasoning, done. This recipe is so simple and so delicious, making it on a weeknight is truly a no brainer.
Sweet Potato Noodle Pad Thai – This is an oldie but goodie and can be made as spicy as you want, plus you can add any type of animal protein you might like in normal noodle pad thai. I load ours up with broccoli and add in extra chili garlic sauce, because I like a kick. Definitely one worth making a little extra of to have as leftovers!
Vegetarian Bolognese – This is a big winner at our house and bonus – the sauce makes a lot so you will have leftovers. The rigatoni noodles are a must!
Panzanella – Ohhhh fresh vegetables, crisp garlic, and toasted bread. What’s not to love? This is on heavy rotation at our house!
Sheet Pan Meals – I just toss whatever vegetables I have in olive oil with garlic powder, salt, and pepper and roast at 375 with a couple chicken breasts if we have them.
Sweet Potato Noodle Enchilada Bake – We have made this so many times over the last couple years and it will definitely stay on the rotation. I skip the cilantro (always) and usually pass by the chopped up tortillas, too, unless I have some I really need to use. Trust me when I tell you that the homemade enchilada sauce is worth the extra little push of effort!
