I make these peanut noodles with chicken, but you could definitely sub in shrimp, or let it be a vegetarian meal by not adding protein. The noodles themselves and the broth they cook in has plenty of flavor all on its own.
Thai Peanut Chicken Noodles Recipe
To make Thai Peanut Chicken Noodles at home, you will need:
4 cups chicken broth
1 can coconut milk (14 ounces)
1/4 cup soy sauce
2 tbsp. fish sauce
1/2 cup peanut butter (I like crunchy)
1 tbsp. honey
1/4 cup green curry paste
2 peppers, chopped (you can use any color, I like red)
3 cloves garlic, minced
1 tbsp. fresh ginger
4 chicken breasts, sliced thin
2 limes, juiced
1 cup spinach
1 pack rice stick noodles
peanuts and green onions for garnish, optional
1. In a large pot over medium heat, combine the chicken broth, coconut milk, soy sauce, fish sauce, peanut butter, honey and green curry paste.
2. When light greenish yellow in color and fully combined, add in peppers, garlic, and fresh ginger.
3. Let the pot come to a simmer and add in chicken breasts.
4. When chicken is fully cooked, add in lime juice, spinach, and rice stick noodles.
5. Stir to combine and let noodles soften.
6. For optional garnish, toast peanuts in sesame oil on the stove. Chop green onions in small slices.
7. When noodles have softened, remove from heat, garnish, and enjoy!
