Whew! It’s been a minute since I checked in with an Eating Lately Via My iPhone post. I think sharing what I eat (for whatever reason?!) really resonates with people and I’m happy to do it. I know when I see what people are eating, it’s a great way to find new recipes or dinner inspiration. That said, I almost always modify the recipe in some way (I can’t help myself), but make notes of changes for anyone following along. Let’s dive right in to what we’ve been eating lately, all courtesy of my trusty iPhone.
Eating Lately Via My iPhone
Macaroni and Cheese with Pancetta – This was a throw together meal we had one night when I realized it was 6PM and I had nothing planned. Noodles, butter, pulled apart cheese that Dane had on hand for lunch sandwiches and pancetta that was about to go bad. Why did we have pancetta? I have no idea honestly. But this was good. Definitely had a stomachache for several days, but…worth it.
What’s Gaby Cooking Larb Bowls – These bowls are a no-fail dinner option and we almost always have what we need on hand to make them. I omit the kale, because we almost never have it (ha) and honestly, I’m not a huge fan. It’s just as good without!
Crunchy Asian Ramen Noodle Salad – My aunt has been making this for years and we had it a few weeks ago at her house. I was reminded by how much I liked it and whipped it up at home. Dane put chicken on top of his for a little extra protein. I love the flavor in these and the crunch of the noodles makes it. Fair warning, if you think you’ll have leftovers, don’t mix the noodles into the salad (just add them individually) or they’ll be soggy the next day.
Kitchen Sink Cookies – It’s Cadbury Egg season and in an effort to stop eating handfuls of them at a time, I decided I would make cookies for Dane’s office. Of course, I had to eat somewhere between 5 and 10 before they could be delivered, and I can say that subbing in Cadbury eggs was an egg-cellent choice. Sorry, I had to.
La Scala Salad – I found this recipe on The Salad Lab and it’s so dang good. The homemade dressing makes this one. I didn’t have as much mozzarella as it called for, but I honestly did not notice a difference. We’ve made this several times now!
Brussels Flatbread – This is a super easy 4-ingredient Trader Joe’s dinner idea. I bought flatbread, shredded Brussels sprouts, balsamic glaze, and caramelized onion dip. I could eat this every night of the week, mostly because it’s so dang easy.
