There is one thing that I love that I don’t make nearly often enough and it’s pasta salad. If I go to a party and there is a bowl of pasta salad, it’s legitimately the first thing I go for. So why do I never make it? I wish I knew! It’s so good. I saw someone eating something similiar on Instagram the other day and decided to make some of my own. Let me tell you something — it was all I could have dreamed of…and more.

Quick + Easy Pasta Salad
I took only one photo, so no fancy styling (sorry!), but two things worth noting about this: 1. It made a ton, even with two adults eating it for dinner. There were two containers of leftovers. 2. I’m not a huge leftovers person, but I ate this for 3 days without hesitation and it was delicious. It didn’t get gross!
Also worth noting, I used what I had on hand. If I were to make this again, I might add little pieces of broccoli, more peppers, or carrots.
To make this easy pasta salad, you will need:
1 box of whatever pasta you have (Banza works well in this!)
1 red pepper, diced
1 small cucumber, hollowed and diced
1 small zucchini, hollowed and diced
1/4 cup diced red onion
10-15 mini mozz balls, chopped
sliced pepperoni (however much you like!)
For the dressing you will need:
1/3 cup apple cider vinegar
1/2 cup olive oil
1 clove garlic, minced
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil
1. Cook your pasta and let it cool completely.
2. Chop up all your veggies, mozz, and pepperoni and put it in a large bowl.
3. Mix in pasta.
4. Whisk all your dressing ingredients together and pour over your pasta mix.
5. Mix together and enjoy!
