Thai Crispy Rice Salad
The foundation of this salad is – as you may have guessed – the crispy rice. Once you have the crispy rice, the rest of the salad comes together easily. You mix the rice with a variety of fresh ingredients, including chopped mint, peppers, green onions, carrots, and shelled edamame. The salad also features peanuts for an extra crunch and fresh lime juice for a burst of tanginess.
What makes Thai Crispy Rice Salad so special is the combination of textures and flavors. The crispy rice pairs perfectly with the fresh herbs and tangy lime juice, while the peanuts add a nice crunch.
Making this salad at home is relatively straightforward, though it does require some preparation. The most time-consuming part is chopping up all the vegetables, but it’s definitely worth the effort. Worth noting that I think this salad tastes best when all the vegetables are the same size, so each bites gets a little bit of everything.

To make Thai Crispy Rice Salad at home, you will need:
1 packet ReadyRice (I use brown rice, but white or jasmine would be fine, too. Alternately you could sub in 1 cup of cooked rice).
1 tbsp. chili crunch
1 red pepper, chopped
1 yellow pepper, chopped
1 cup matchstick carrots
5 green onions, chopped
1 package of shelled edamame, cooked (I use an entire 9 oz. bag from Trader Joe’s)
1 English cucumber, chopped
1/2 cup peanuts, loosely chopped
1/2 ounce fresh mint, chopped (This is an entire container of fresh mint from the grocery store packaged like this)
For the dressing: Easy Thai Salad Dressing
optional: I like to add a protein like shredded chicken or pork, but this salad is perfectly delicious without it, too.
1. The first thing to do is make the Crispy Rice – it’s easy! Put rice and 1 tbsp. chili crisp into a bowl and mix well. Then put it in your air fryer for 15-20 minutes at 400 degrees. If you don’t have an air fryer, put your rice flat on a baking sheet and into your oven at 425. Check frequently to make sure rice isn’t burning.
2. While the rice is cooking, chop vegetables and arrange them in a bowl.
3. When rice is done, add to bowl.
4. Mix up your Thai dressing and pour over.
5. Toss salad and enjoy!
