Let me be honest, when it’s winter time and the weather outside is in the 20s and 30s, the last thing I want is a salad. Frankly, I don’t want a boring salad any time which is why I’ve always made it my mission to make my salads fun and enjoyable. But it takes extra work in the winter! So trust me when I say that this Shaved Brussels Sprouts Salad With Pomegranate and Crispy Rice is ANYTHING but boring. In fact, I took it to a party and it got rave reviews. Let’s dive in…

Shaved Brussels Sprouts Salad With Pomegranate and Crispy Rice
The combination of the warm rice, hearty kale and Brussels, buttery walnuts, sweet pomegranate, and tang of Parmesan is second to none. Sometimes I even impress myself when things taste better than I imagine them to in my head, so trust me when I say, this is one worth making! If you haven’t had great experiences with kale in the past, I highly recommend 1. cutting it in tiny, tiny, tiny pieces and 2. massaging it in a light amount of olive oil. It makes ALL the difference.

To make this Shaved Brussels Sprouts Salad with Kale and Pomegranate, you will need:
1 packet ReadyRice (I use brown rice, but white or jasmine would be fine, too. Alternately you could sub in 1 cup of cooked rice).
2 tbsp. soy sauce
1 tbsp avocado oil
1.5 cups shaved Brussels sprouts
1 cup kale (cut into super tiny pieces!)
3/4 cup toasted walnuts
arils of 1 pomegranate
1/2 cup shaved Parmesan
For dressing, I used my Creamy Vinaigrette and it was the perfect add-on to complement this nutrient-dense salad.
1. The first thing to do is make the Crispy Rice – it’s easy! Put rice into a bowl and mix well with soy sauce and avocado oil. Then put it in your air fryer for 15-20 minutes at 400 degrees. If you don’t have an air fryer, put your rice flat on a baking sheet and into your oven at 425. Check frequently to make sure rice isn’t burning.
2. If you need to easily remove the arils (seeds) from your pomegranate, I used the water bath method and it worked great.
3. Assemble your ingredients in a large bowl.
4. Toss in dressing and enjoy!
