There are no two ways around the fact that I love salad. If you spend any time following me on Instagram you know I have an entire dedicated story highlight to my salad addiction. There are worse things, right? Anyway, I made my version of an elevated Caesar Salad a few weeks ago when I had family in town visiting and it’s now known as: Super Green Caesar Salad. You’ll see why in a minute. If you love creamy Caesar dressing, tangy Parm, and robust greens…today’s recipe is for you!
Super Green Caesar Salad
One of my main goals when sharing salads is to make eating salad look delicious, but also make the prep part super approachable. All you need to make this salad come together is a large bowl, a sharp knife, and obviously, the ingredients. You don’t even need to make your own Caesar, because I find this Creamy Caesar is actually better than anything I could make. But also, if you make a Caesar you love…go on, make it!
To make Super Green Caesar Salad, you will need:
1 head romaine lettuce, chopped fine
1 cup spinach, chopped fine
1 cup shredded Brussels
1 cup shredded cabbage
2 avocados, sliced thin
1/4 cup red onion, sliced
1/4 cup shaved Parm (I love Cello brand in the tub from Costco)
Your favorite Caesar dressing
1. Assemble all your ingredients in a large bowl, add Caesar dressing, and toss together.
2. If you want to take this up a notch, feel free to garnish with crispy quinoa. I love a crunch!
