I think by this point we’re on the salad portion of the #FallFestBrunch! A mixed green & mandarin blend topped with fresh straciatella!
If you haven’t noticed by now, cheese is KIND OF my thing. Specifically, freshly stretched pasta filata cheeses. After all, I DID just go on a culinary tour of Italy. I digress.
Are you ready for the salad?
First, stretch the straciatella. In Italian, stracia means strings…like, when you see straciatella gelato in the frozen foods section..It’s referring to the strings of chocolate traditionally found in a creamy vanilla gelato. In this case, stracia refers to strings of mozzarella that are then soaked in heavy cream. It is 6 shades of delicious, so you should try it sometime and stretch at home!
Once our cheese was stretched, we were ready for salad eating!
To Re-Create, You Will Need:
Mixed Greens
Mandarin Oranges, rinsed and dried
A dollop of straciatella
So simple, yet so delicious! Our salads were topped with a pumpkin vinegar reduction–directions can be found here. It might not sound like enough of a “dressing”, but I think you’ll be surprised!
