Sometimes I get sick of salad (I know, I know), and want something a little more. For those cases, I want to share one of my favorite recipes that’s perfect for lunch or a light dinner: A Chicken Caesar Salad Sandwich. These sandwiches combine the classic flavors of a Caesar salad with the convenience of a handheld meal on toasted, butter sourdough. They’re easy to make, delicious, and always a hit…let’s dive in.
Chicken Caesar Salad Sandwich
I love salad so much, but sometimes I want to take it to the next level, which is how I came up with this recipe. I honestly hesitate to even call it that, because it’s super simple. The key step to bring your sandwich to the next level is to chop your lettuce into bite sized pieces and toss in dressing BEFORE you put it on the bread. This really helps the flavors come together and avoids making your bread soggy.
Another thing I think works really well for this sandwich in particular is to use crockpot shredded chicken. It is easier to spread, ensuring you get chicken in every single bite.
To make this Chicken Caesar Salad Sandwich at home, you will need:
2 pieces sourdough bread, toasted and buttered
1/2 cup shredded chicken (or even a little more if you really want to pack in the protein)
2 cups lettuce, chopped very fine
2 tbsp. Caesar dressing
optional: avocado slices, red onion slices, additional Caesar dressing for chicken
1. Toss lettuce and dressing together in a bowl.
2. Place warm sourdough slices side by side and slather with Kerrygold butter (or whatever you have — but don’t hold back! the salted butter is TOO good)
3. Put shredded chicken on one piece of bread (option to drizzle more Caesar on top)
4. Add dressed lettuce to other piece of bread (option to add avocado and onion)
5. Put sandwich together and slice. Enjoy!
Tips and Variations:
Add Bacon: For a smoky flavor, try adding some crispy bacon bits to the chicken mixture.
Spice It Up: If you like a bit of heat, add some red pepper flakes on top of the avocado.
Make It a Wrap: If you’re watching your carbs, you can easily turn this into a wrap using large lettuce leaves or whole wheat tortillas.
