My New Food Obsession

If you’re new around here, I really love to eat. What I don’t really love is something that’s going to take me all day to prepare or something that needs to sit/soak/rest for more than an hour. I don’t have time for that. Dinner is meant to be prepped after work and enjoyed–and that’s that.

When I found myself with half a bag of new potatoes, I decided attention must be paid. I was sick of pseudo mashed potatoes and using them for kebabs (again!) was not an option.


Enter: Bleu Cheese Half Bakes


You Will Need:
12 New Potatoes
1 cup shredded cheese
1/3 cup bleu cheese salad dressing
Salt, Pepper


1. Boil potatoes and water in a large pot until potatoes are tender. Let cool.
2. When potatoes have cooled, cut them all in half and place on a baking sheet. Salt and pepper.
3. Put a dollop of bleu cheese dressing on every half.
4. Sprinkle cheese on top.
**This gets messy, which is why doing it on the baking sheet is crucial.
5. Bake at 350 degrees for 5-7 minutes, or until cheese is tender.


The result is mind-blowing, I promise. Next time I’m adding bacon for an even larger heart-stopping, fatty & caloric treat. I can’t wait!
