Sometimes I don’t feel like making dinner. Shocking, I know.
It’s too hot, I’m tired, the dog is driving me nuts, I’m not really hungry, my job is stressing me out…the list goes on. On these nights, Dane is really lucky to get something mashed together and we call it dinner.
Roasted Red Pepper & Basil Quinoa is the product of one of these nights. I was tired and not especially hungry. I had roasted red peppers that needed used and an overflowing pot of basil on my porch.
You Will Need:
1 cup quinoa, cooked
5 oz. roasted red peppers
2 cloves of garlic, minced
1 small diced tomato
5 leave basil, chopped
olive oil, salt, peper
1. Add all ingredients to a large skillet with a dash of olive oil.
2. Stir until all ingredients are heated through.
3. Season with salt and pepper.
The best thing about this recipe is that it can be modified to fit what you have in your pantry–I think adding zucchini would be amazing! It has plenty of flavor and enough protein to be a satisfying meal.
