If there’s one thing that Dane just can’t get enough of–it’s pizza. In fact, after the wedding we’re doing a 30 day pizza challenge where we will experiment with different types of pizza each day for 30 days….more on that at a later date. In the meantime, we make pizza every Friday night as a sort of…practice. When we stumbled across a recipe for a zucchini crust, we both wanted to try it ASAP!
I think next time I’m going to cook the crust longer and make it a bit more crispy. This time, it was more like a fritatta, which was delicious, but not like pizza.
You Will Need:
3 cups shredded zucchini
3 eggs or 3/4 cup egg substitute
1/3 cup flour (I use Cup4Cup)
1/2 teaspoon salt
1. Mix together the zucchini, eggs, flour and salt in a large bowl.
2. Spread on a pizza pan.
3. Bake at 450 degrees for 10 minutes, or until browned.
4. When your crust is browned, remove from oven, top with your favorite pizza toppings and bake again until cheese is melted.
