Dairy Free Cheesecake Stuffed Strawberries
Admittedly, I used to make this recipe with just a normal block of cream cheese, but I wanted to make a dairy free alternative and anyone who knows a thing about dairy free eating knows that sometimes it takes a bit of trial and error. The way I originally wanted to do this involved whipped coconut cream and that just fell…very, very flat. I’m happy to report that I’ve perfected it and these delicious cheesecake strawberries are not only dairy free, but incredibly delicious. Even your dairy-loving friends will agree. Easy Dairy Free Dessert 
When I created this recipe for my cookbook several years back for it to be photographed, I used regular cream cheese like I mentioned, but by just swapped out ONE ingredient, you get the same flavor, same texture and same delicious taste. That’s a major dairy free dessert win!
To recreate this recipe at home, you will need:
1 carton of fresh strawberries, hollowed
4 oz. of Kite Hill plain cream cheese spread
1/4 cup organic confectioner’s sugar
splash vanilla
1. To hollow strawberries, use a paring knife to slice diagonally into the strawberry so the top forms a cone shape when it is removed.
2. Mix together Kite Hill, confectioner’s sugar and vanilla until it is smooth and creamy.
3. Stuff mixture into hollowed strawberries and serve.
This is such a delicious dessert any time of the year, but it’s particularly tasty in the summer months when it’s too hot to fire up the oven and you want something tasty without a lot of fuss.
