I feel like it’s been so long since I did a weekend recap post, much less shared some of my “best of the internet”, so we are BACK! Our weekend kicked off with getting our yellow fever vaccinations here on Oahu, but let me rewind a bit. We knew we needed this particular vaccination for our trip to Kenya, so we began the process in advance. What we didn’t realize is that there is a shortage of the vaccination right now and getting it can be a little bit tricky, particularly when you live on an island. Thank heavens one of the hospitals here pulled a major MEDICAL HAIL MARY and had two shots shipped from the UK to Oahu. Whew! Needless to say, we were a little bit panicked wondering what we might do if that didn’t happen. Our visas aren’t good without the vaccinations so I guess we may have been spending a lot of time in the Nairobi airport…GULP! Luckily, we are now good to go!
After our shots, we got the heck outta Honolulu to try to beat the Friday night traffic that plagues the city going westbound. We headed home and since the weather had been a little iffy most of the day, we knew the chances of a good sunset were pretty high. Dane packed up a picnic bucket with a bottle of rosé we brought back from Italy, some of our favorite snacks and we were off to the ocean for some sunset happy hour fun. It was a great way to unwind after a hectic week of me getting back from the mainland and settling into our routine.
Saturday we woke up before dawn to two whining dogs wanting breakfast. Somehow they never quite know which days are meant for sleeping in 😉 We had decided to rearrange our house a little bit so we spent most of the morning doing that and it’s kind of crazy to see how a few little changes can transform a room. We went to the beach for a few hours to enjoy the sunshine before heading to Target and picking up some random things for our trip like anti-diarrheal medicine, HA!
We had a really low-key night at home (my favorite), where I caught up on all the People magazines I had missed being gone and Dane dove into Man In The High Castle. I’ve gotta be honest, I used to really enjoy that show and it’s a bit too violent for me these days. Anyone else? I made a simple sheet pan dinner with potatoes, corn and onions and put it over avocado and kale. It was delicious!
Sunday our neighbor (a chaplain in the Air Force) was preaching, so we went to church with his family to listen. He did such an amazing job! The rest of the day we spent rearranging some more and cleaning. For dinner I made Nadine’s take on Meghan Markle pasta. Since the Duchess is Down Under (and probably as close to her as I’ll ever be), I thought it was pretty fitting 😉 Honestly, it’s just so easy that this dish has become a total go-to in our house and the leftovers taste even better!
