To be honest, when I first heard about it I thought – BLEH! That sounds absolutely awful! But then I tried it and my taste buds completely disagreed. Bulletproof coffee is actually delicious, filling and this seasonal version with just a hint of pumpkin spice is like drinking fall in a cup. I first learned about bulletproof coffee when a friend of mine said she swore by adding Kerrygold butter into her coffee. I had to ask her twice if she meant the bright yellow butter. Butter? In coffee? What is this bulletproof madness?!

Turns out, bulletproof coffee is used by many as an energy boost and also contains premium MCT coconut oil, something that is naturally rich in Medium Chain Triglycerides (MCT) which is efficiently utilized by the body for energy production and helps aid in calorie burning. I wanted to learn more and was incredibly intrigued.
How does bulletproof coffee work? The combination of caffeine and saturated fat gives the body a lasting energy boost. I was blown away by how much I enjoyed the flavor – it tastes like a very fancy coffee drink you would pay $6+ for at a restaurant! I swap out butter for ghee (Carrington Farms is the best for this particular recipe) and since it’s the season for all things pumpkin, I wanted to give my bulletproof coffee recipe a boost. With just a few simple ingredients, you can test out this delicious cappuccino-like drink at home. Here’s what you need…
For Pumpkin Pie Bulletproof Coffee, you will need:
1 cup of brewed coffee
2 tsp. Carrington Farms Coconut Oil
1 tbsp. Carrington Farms Ghee
1/4 tsp vanilla
1/4 tsp. Calicutts Autumn Harvest Spice Blend
1/8 tsp. pumpkin pie spice
1. Put all ingredients in your Vitamix or blender.
2. Mix on high speed for 20 seconds until frothy.
3. Drink immediately and enjoy all the fall goodness (and added energy!).
And that’s it! It can seem kind of intimidating at first and it will be weird to mix ingredients into your coffee like ghee and oil, but trust me when I tell you that this beverage is a real treat! Is it something I would have every morning? Probably not, but it’s definitely worth the effort for something new and positively delicious.
