Eating Lately via My iPhone

How is everyone doing? I hope you’re hanging in there. It will come as no surprise to anyone that we’ve been eating at home more than usual and supporting local takeout when we can. Sometimes I feel completely overwhelmed at the thought of going into my kitchen to prep ANOTHER FREAKING MEAL, but I figured sharing what we’ve been cooking and eating lately might inspire someone else, so let’s get down to it….Eating Lately via my iPhone! I know when I see what people are eating, it’s a great way to find new recipes or dinner inspiration. That said, I almost always modify the recipe in some way (I can’t help myself), but make notes of changes for anyone following along. Let’s dive right in to what we’ve been eating lately, all courtesy of my trusty iPhone.

Chopped Thai Salad – I have never made a bad recipe off of What’s Gaby Cooking. In fact, if you’ve been around for awhile you know I’m a little bit of a fangirl. Anyway, this chopped Thai salad is packed with flavor and we absolutely loved it. I will say, it felt a little bit labor intensive getting all the ingredients ready but I’d do it all over again, because the flavor is insane. We added grilled shrimp!

Feta Crusted Salmon – I had made this recipe once before and forgotten about it. When I saw wild caught salmon at Costco, I picked one up and decided to do a “fancy” date night at home. This recipe is so ridiculously easy (paired it with smashed potatoes and green beans), but the taste is restaurant quality. I don’t pride myself on cooking fish, so trust me when I telly you that anyone can do it!Feta Crusted Salmon

Panzanella Salad – My mom used to make this all the time when I was at home and for the life of me, I cannot figure out why I have never made it myself. It’s super easy and also super delicious. It was Dane’s first time ever having it and he loved it. Lots of fresh veggies, refreshing taste, not heavy but filling and the best part? Bread chunks! We also added grilled shrimp. Panzanella

Creamy Corn Pasta – If you’re sleeping on the NYT recipes, it’s time to subscribe. Much like Gaby, I’ve never met a bad one. This creamy corn pasta is no exception and the sauce is made from butter, corn, scallions and water. Just trust me when I say you need to make this. Dane was really skeptical and now it’s one of his favorite dishes. We add whatever vegetable we have on hand (asparagus shown) for a little extra flavor. Lemon Pasta

Pumpkin Scones – I couldn’t leave these out, right?! They’ve been on breakfast repeat at our house with 0 complaints. Can you blame us? Pumpkin Chocolate Chip Scones

Wraps – We’ve been eating a lot of wraps lately, because we both love them, except the other person didn’t know. I know, it’s weird. Anyway, when we discovered our mutual love of wraps, we have eaten no less than two per week since. They’re kind of great, because we can both add whatever we want or have on hand in the refrigerator. The top is Basil Vinaigrette with arugula, peppers, onions, and quinoa. Bottom is Dump Ranch (a Whole30 fave!) with roasted buffalo cauliflower, arugula, avocado, onion, peppers and cucumbers. Quinoa Vegetarian Wrap

Sweet Potato Noodle Pad Thai – It’s been awhile since I made this one and we were running low on dinner ideas last week (and also running low on refrigerator items) so I pulled out this oldie-but-goodie. I was making it so often that we both got burned out, but it tasted so good. I love it with broccoli, so I really recommend that, but I added extra cabbage and peppers and it tasted great. Kitchen Sink Cookies – My sweet tooth has been insatiable, so having something that is pre-portioned (like a cookie) is ideal, because if it’s a cake…look out. I’ll eat the whole thing. I had yet to make Gaby’s Kitchen Sink Cookies, but I am so glad I did. The flavor is probably the best “cookie base” I’ve ever tried and we used peanut butter M&Ms. I’ve actually made them multiple times. The below time included the addition of coconut. Taco Salad – Maybe it’s just me, but regular salad is really boring. Lately, I really need something to jazz it up, so I can be excited to eat it for dinner. We’ve been doing taco salads lately with a big lettuce base, roasted vegetables, black beans, some crushed chips, guacamole and salsa. It’s delicious! Taco Salad

Acai Bowls – A staple in our home, for sure. We recently got some delicious local honey at Costco, so that has been a mega treat for our bowls. The more fruit on top, the healthier it is, right? 😉 Acai Bowl
