A quick breakfast is all I ever need or want, unless it’s Saturday or Sunday–in which case, I want a mimosa and an omelette packed with fresh veggies and meats. Dane and I both get up at 4am (yes, you read correctly), so a quick breakfast is CRUCIAL. Enter: Apple Cinnamon Baked Oatmeal Bites. I was originally inspired by this recipe from my sweet friend, Ann, and modified it a little bit to match what I was looking for 🙂
Apple Cinnamon Baked Oatmeal Bites
You Will Need:
2 eggs, beaten
1/4 cup honey
1 teaspoon cinnamon
1 teaspoon baking powder
1/4 cup coconut oil (or butter, but admittedly, I was trying to make this a bit “healthier”)
1 small apple, grated
1 1/4 cups almond milk
3 cups old fashioned oats
Apple Cinnamon Baked Oatmeal Bites
1. Mix all ingredients except oats.
2. Slowly add in oats.
3. Refrigerate for 20 minutes, or until oats have soaked up all the liquid.
4. Grease a muffin pan and add oat mixture.
5. Bake at 375 for 11 minutes, or until top is crunchy.
These are pretty good with a scoop of ice cream on top, too 🙂
