You guys, I’ve been in a major recipe rut. My new favorite thing to do is buy pre-packaged meals at Whole Foods and pop them into the oven at the end of a very long work day. We did the math and as a family of two, it’s the same cost as buying our food and preparing it day-to-day, which doesn’t help my motivation. That said, I have had a little energy in the take for homemade food some of the time.
So let’s get down to it….Eating Lately via my iPhone! I know when I see what people are eating, it’s a great way to find new recipes or dinner inspiration. That said, I almost always modify the recipe in some way (I can’t help myself), but make notes of changes for anyone following along. Let’s dive right in to what we’ve been eating lately, all courtesy of my trusty iPhone.
Eating Lately Via My iPhone
Short Rib Ragu – This was absolutely delicious and since I made it as I shared in my blog post. I served it with my own homemade pasta, but truthfully I would eat it by the spoonful.
Greek Chicken Salad – This one doesn’t necessarily have a specific recipe I followed. In fact, I used what I had in my refrigerator! The key is topping it with Gazebo Room Dressing…ohhh it’s so good!
Refrigerator Salad – Yet again, no recipe, but a salad with leftover vegetables that were going to go bad in our refrigerator and some roasted potatoes on top. The key ingredient with this one is Gaby’s Basil Vinaigrette. Don’t let the color turn you off!
TikTok Feta Pasta – I’m sure by now you’ve seen the viral feta pasta on Tik Tok. Basically, you just put a block of feta cheese, cherry tomatoes, garlic and olive oil in a roasting pan and bake for 25-30 minutes. Mash it up with a fork and then serve with pasta! I put mine in the Vitamix before mixing with the pasta, because I’m not a huge fan of chunks of tomatoes and it tasted pretty good! Best pasta I’ve ever eaten? Probably not, but two major thumbs up for how easy and quick it is!
Creamy Balsamic Mushroom Chicken Marsala – Okay, first things first, we subbed in onions for mushrooms. I served it over garlic Parmesan mashed potatoes and this meal is INCREDIBLE! It’s quite a few steps for a weeknight, so maybe save for a weekend occasion, but it’s totally worth it!
Eggs Benedict – Again, I’m not re-inventing the wheel here, but staying at home and cooking breakfast
Chopped Salad with Coconut Shrimp + Strawberries – There is a restaurant very near to my hometown that makes a delicious salad called “Jess’ Favorite Salad” that features coconut shrimp and strawberries. A few weeks ago, I decided I would make it at home and it didn’t disappoint! I’ve linked my Instagram Reel for how to make easy coconut shrimp. We topped ours with Papaya Seed dressing and ate it twice in two days!
Now is a good time to point out I’ve been very into Instagram Reels for sharing our food. I’ve made Spicy Sweet Potato Noodle Pad Thai, Chicken Parm Meatballs with Spaghetti Squash, Spicy Pesto Alla Vodka, Bacon and Goat Grilled Cheese, and lots of Acai Bowls.
For what I’ve lacked in the dinner department, I have completely made up for in making sure we have desserts. All of these have been made exactly as the recipe states, because…baking. The only exception is I swapped out add-ins to Gaby’s cookies, because she tells you it’s okay 🙂
