Roasted Veggie Crunch Salad
I have seen variations of this recipe floating around social media, but I knew it was finally time to make it my own. What I love about putting salads together at home is that I can make them as robust as I want to really blend flavors (see also: use up what I have in my refrigerator). The key for this one is making sure every single bite is the same size. Because this dish features rice, I knew I needed to make the pieces small, which required a bit of tedious knife work, but ohhh – it was so worth it. This recipe includes things you likely already have in your pantry and refrigerator, so let’s dive in.
To make Roasted Veggie Crunch Salad at home, you will need:
1 cup brussels sprouts, chopped
1/3 red onion, diced
1 cup red cabbage, chopped
2 cups shredded chicken
1 cup cooked rice
1 cup cooked farro
1/4 cup sliced almonds
1/4 cup sunflower seeds
1 cup sweet potato, chopped
handful (about 1/2 cup) matchstick carrots
salt, cumin, chili powder, garlic powder, pepper, and olive oil
optional: Orange Maple Tahini Dressing
1. To get this salad started, you will want to take your sweet potato and carrots and toss them in olive oil with salt, cumin, chili powder, garlic powder, and pepper. Roasted at 400 degrees for about 20 minutes.
2. While the potatoes and carrots are roasting, assemble your ingredients in a bowl.
3. When the vegetables are cooked through, remove them from the oven and toss into salad.
4. We love this salad with Orange Maple Tahini Dressing (it adds just the right amount of flavor and zest while letting the salad ingredients shine), but feel free to enjoy it with the dressing of your choice!
