Potato Chip Chicken
I need to preface this recipe post with the fact that this isn’t the healthiest dinner option. In fact, it’s not healthy at all. Perhaps that is what makes it so good. Who knows. Either way, we eat it a lot at this house and once you taste it, you’ll understand why.
Easy Chicken Dinner Recipe
One thing to note before you get started is that you can make as big or little of a batch of this chicken as you want or need. It’s delicious the day you make it, but it’s also great leftover on top of a salad, so if I am cooking, I will typically make extra to have leftovers.
To make Potato Chip Chicken at home, you will need:
4 chicken breasts, sliced into strips (you can also use pre-cut chicken tenders)
French Onion potato chip dip (store bought is great! I’m partial to Lipton Recipe Secrets mixed with sour cream)
3 cups loosely crushed up plain potato chips (not ground into crumbs!)
*NOTE: Sour Cream & Onion potato chips are also really good*
Potato Chip Crusted Chicken
1. Preheat your oven to 350 degrees.
2. Line a baking sheet with parchment paper.
3. Take a chicken strip and cover it in dip.
4. Roll the dip-covered chicken in crushed potato chips. It helps to press them down into the chips to make sure it sticks!
5. Repeat for every piece of chicken.
6. Bake for 25 minus, or until chips begin to brown.
